Olive Oil Valentine’s Day Brownies (Easy Boxed Brownies Hack)

We LOVE a life hack! Are you pressed for time and hosting a Galentine’s day evening? Or maybe you just have a sweet tooth that needs satisfying? Make these perfect boxed brownies topped with freshly chopped strawberry. Drizzled with white chocolate and made slightly healthier with olive oil.

Serves: 5

Ingredients

  • 1 whole Grain-Free Classic Brownie Mix – Otto’s Naturals, any boxed brownie mix
  • 1 whole Egg
  • 1/3 cup Extra Virgin Olive Oil
  • 1 cup Strawberries, (diced)
  • 1/2 cup White Chocolate Chips, (melted)

Directions

  1. Preheat oven at 350
  2. Grease and cover in parchment paper an 8×8 baking dish
  3. Follow directions of brownie box but replace oil with extra virgin olive oil
  4. Give it a good mix
  5. Please brownie mix into 8×8 pan
  6. Bake for 25-30 min in the oven
  7. While brownies are baking, wash and dice your strawberries, set aside
  8. Once brownies have baked, set aside on a wire rack to allow to cool
  9. Once brownies are at room temperature, place strawberries on top
  10. In a small bowl, melt white chocolate chips
  11. Place melted chocolate into a small ziploc, cutting a hole at the tip
  12. Use ziploc to make drizzle lines across the brownies
  13. Cut up into squares and serve in cute muffin papers or serve as is

Notes

Can stay in the fridge for a couple of days in an air-tight container.
