Mini Dark Chocolate Spiced Biscuits

Crunchy, spicy Spekulatius cookies are my kids all-time favorites - once the bag is opened there is no stopping them! But now with Dark German Chocolate on the bottom maybe I'll be able to hoard these little mini Speks for the adults!

Spekulatius a type of spiced shortcrust biscuit. It's crispy and is great for dunking into coffee or milk. The cookies are traditionally molded with impressions of windmills or even people!
